The Knights Templar wouldn’t disown this treasure. We can cultivate the memory of the past and still move on. The Commandery of Peyrassol, on the outskirts of Flassans-sur-Issole, proves it in a beautiful way. Philippe Austruy and Alban Cacaret have created a brand new cellar sheltered by centuries-old walls where they produce intense, elegant and distinguished wines.
Commandery Peyrassol offers a “table d’hôtes” from Easter to the middle of October. Between 30 € and 52 €, the chef Guillaume will treat you every lunch (dinner only by reservation), every day except Monday, with a lovely cook based on the farmer’s market produce and vegetables from the garden and the menu changes every day. For special occasions, the wine estate also offers several reception rooms for a meeting of ten people or a wedding or banquet for up to 200 people.
A stroll in the vineyards of Peyrassol is full of surprises. A sculpture park is one of them; the collection includes works by Cesar, Arman, Vernet, Lalanne, Tinguely or Dubuffet, major artists of our time. You will also stumble upon old oratories, small monuments dedicated to the worship of a saint. La Commanderie houses four witnesses to its religious past; if one of them has lost its statuette, the three others are still in perfect condition. They are dedicated to Mary, St. Joseph, patron of families and artisans, and St. Theresa.
