Tasting wines at Domaine Saint Jean feels like being home. He gives it all his free time, and she sacrificed her career for it; even their children Pauline and Jean-Baptiste lend a hand. Yet Jean-Patrick and Nathalie Pacioselli regret nothing: their vineyard, hoped and prepared long before, requires a lot of them, but give them so much more.
This wine tasting looks like no others. Nathalie receives wine lovers at home, around a plate of smoked salmon and homemade blinis or a nicely flavoured terrine, a tasty specialty of her mom.
The Pacioselli couple vinifies wine at home, in their house basement. Even though it has a modest size, their cellar allows the best winemaking practices, such as short maceration at low temperature, six months aging in stainless steel tanks, through temperature-controlled cold fermentation.
